I thought we could all use something warm and gratifying today. So I’m going to share some comfort in a bowl.
There’s something soothing about washing and dicing potatoes and carrots. It feels like going back to a simpler time. This is also a wonderful meal if you’re on a budget, and it’s also a meal that begs to be shared with a neighbor. Add it into your weekly rotation and enjoy.
You’ll make this in a crock pot, so it will take you fifteen minutes to peel, dice, and assemble the ingredients. Then you’ll walk away. It’s a perfect meal.
Miss Murder’s Easy Potato Soup
Ingredients:
Four Russet Potatoes
1 chopped onion
2 sliced carrots (or a handful of baby carrots)
4 cups chicken or vegetable broth
1 teaspoon Italian seasoning
Pepper to taste
1/4 cup flour
1 1/4 cup milk
Extra toppings like shredded cheese, crumbled bacon, chives, sour cream, etc.
Peel and dice the potatoes, carrots, and onion. Put in the crock pot. Add the broth and spices. Cook on low for 6-8 hours/high for 3-6 hours, or until the potatoes are tender.
When you have half an hour left of cook time, whisk the 1/4 cup of flour into the milk, add it to the soup, and stir. Cook for another half hour. Then either eat as-is, or mash the soup with a potato masher to smooth it out. You can also puree it in a blender for a finer texture.
Dish out and top with cheese and bacon bits, if you desire. Then comes the most important part: enjoy.
