Miss Murder’s Sick Day Lemon Orzo Soup!

First, I want to make it abundantly clear that I’M NOT SICK, simply because I don’t have time for it. But if I was sick and hypothetically spent the entire long weekend in bed with a fever and lost voice, this is the soup I would (and did) make. It pulls together quickly and requires very little babysitting.

It’s delicious, easy, vegan, and especially good for colds because of the generous splash of lemon. Lemon gives you that boost of vitamin C as well as being a good decongestant.

You will need:

1 splash of olive oil

1 diced onion

2 ribs of celery, diced

3 carrots, diced

6 cups of vegetable broth

3 cups garbanzo beans (or two cans)

1 cup orzo

Juice of 1 lemon

Salt and pepper to taste

 

Directions:

  1. Heat oil in a pot. Sauté onion, celery, and carrots for 3-5 minutes. Add vegetable broth and garbanzo beans. Bring to a boil.
  2. Add orzo and reduce heat. Simmer for ten minutes. Lie on the bed and long for death to take you.
  3. Add lemon juice and stir. Sprinkle with salt and pepper (optional) and serve.
