Miss Murder’s Easy Pressure Cooker Chicken and Rice Soup!

You guys know that I’m all about ease. It it’s too time consuming or difficult, I won’t do it. Especially right now while I’m still dealing with repercussions from my earlier concussion. Following too many steps gets confusing and frustrating. I’m trying to be kind to myself while I continue to heal.

This delicious meal is all about kindness. Here is my favorite pressure cooker chicken and rice soup recipe! It’s simple, frugal, wholesome, and fast. You can get it in the pot in under ten minutes.

Ingredients

1 cup rice

2 cups shredded or diced chicken

1 cup diced celery

2 cups diced carrots

1/2 tsp minced garlic

6 cups chicken broth

1/2 tsp Italian season

1/4 tsp pepper

salt to taste

Toss the rice, chicken, carrots, celery, garlic, broth, Italian seasoning, and pepper into the pressure cooker. Close and seal the pot. Turn it onto high pressure for two minutes for precooked chicken or four minutes for raw. When the timer goes off, manually release the pressure. Easy peasy lemon squeezy. Now your hungry neighbors will think you’re a rockstar.
